Lucinda's Bloodshot One Eye appeared to be a different take on eggs in a basket. I immediately earmarked the recipe. I was able to make it a few mornings ago and although it didn't turn out exactly like the picture (do recipes ever?), it was extremely tasty.
Instead of a bloodshot eye, I made a T...for uh, Tisdale. Duh! Ok, so I didn't cut the strips of roasted red pepper thin enough to make a pretty pin wheel, but A for effort. I think what really made this delicious was the butter on the bread and the drippy egg yolk (I know Anna is cringing at the thought of a runny egg yolk :)). I will definitely be making this again.
Speaking of things I'll be making again, Kelly has recently been posting lots of yummy sounding recipes. The other day I read one she had posted for sweet & sour chicken and I knew I had to try it. I followed her ingredient list and directions to the T except that I halved the recipe since I only had two chicken breasts.
From start to finish, I think this recipe took 15 minutes, and it was wicious, very wicious. I served it along side some leftover roasted veggies, but next time I make it, I will be serving it over brown rice so the rice can soak up the sauce.
The best part about this meal was experiencing it again the next day for lunch.
It was a party in my mouth all over again!

I'm pretty much all settled in from the move. Is it crazy that I feel more moved into this house than I did my Lake City house that I lived in for 3 years? I still had things in boxes at our Lake City house that I never knew what to do with, but meant too much to me to throw out. Our office in the LC house was our catchall room for things that had sentimental value, or didn't have a place to be stored elsewhere. I never liked showing people that room because it was disorganized and a little chaotic. I also never really like going in there myself for those reasons. My goal with this new house was to get rid of any and all cardboard boxes, and find a place for everything--even if that meant moving an item from a cardboard box box into a plastic tote to be stored in a closet. Since I have built ins in my office in the new house, I've been able to display some of those things that were in boxes from my old house. I'll post pictures soon. I'm going shopping with my Mama tomorrow to get a few other things I still need.
Since I've unpacked all of my boxes (!!!) and I'm not in school right now (!!!) and I live close to work again (!!!), I've been able to do some yoga in the afternoons in addition to running in my new neighborhood. I've run in Keystone which was fun since I haven't run there since about 2007, and last night I ran on the Rails to Trails path that was put in town during my time in Lake City. I love new running routes, especially in my hometown. I feel goofy sometimes because I'll be running down the road and start grinning from ear to ear at the thought of being back home. I'm sure people who drive by me think I've lost my gourd.
Amidst some of the shopping for my house, I also picked up a running skirt.
It's so comfy, but more importantly it's CUTE! I've read mixed reviews about running skirts, but this one is long enough to not be uncomfortable while running. I absolutely love it. And for you runners who may be reading the blog, I got it from TJ Maxx for $12. Nice. It's Saucony (like my running shoes which don't exactly get a ringing endorsement from me, but the skirt does!).

I need to get my Friday started. I haven't been able to blog all week because I've had an intern with me. We've been working on a huge project that we'll hopefully wrap up today. Normally I'd spend two weeks on a project of this magnitude, and we've had all of about 4 days total to work on it. Hope it turns out ok!

I have always wanted to try making Asian inspired meals but feel too intimidated for some reason. I have decided to take a step out of my comfort zone and try the chicken! And yes, you are just too cute in that running skirt! Maybe that's my problem, it's not laziness that is keeping me from running, rather it's the lack of style I have while doing it...right? hmmm, prob not but worth a shot! Happy Friday!
That chicken looks yummy! I might have to give it a try! Also, the running skirt is super cute. I hate running in shorts because they won't stay in place so I usually end up running in cropped yoga pants. Oh, and speaking of you being out of school we need to get together ASAP! ;)
Also, what don't you like about the Saucony shoes? I love mine!
I'm so glad you tried and liked the sweet and sour chicken!!! I think they should have named that egg recipe something else...the bloodshot one eye title sounds disgusting, they could have named it egg pinwheel or something cute like that haha. The contents looked delicious though! :)
The running skirt is so cute! I've been wanting to get one! but can't find one that is affordable! I'll have to check tjmaxx!
